Mama's Sweet Potato Hash



This is good for breakfast with a side of eggs or dinner as a bowl of yummy goodness.  I have to make 4 batches at once so we can freeze for quick reheating during the week.  Best of all, it's fast to prepare and gobbled up by even picky eaters!

Note on chopping: you want potatoes, apples, and meat diced to be about the same small sized pieces.  Think frozen hash brown size.

Prep time: 15 minutes
Cook time: 15 minutes

Ingredients:
2 medium sweet potatoes, peeled and diced
1 apple, peeled cored and diced
3 tablespoons olive oil, divided
1/4 teaspoon cinnamon
2 Apple Chicken sausages, removed from casing, diced
SmithField boneless honey ham, about 4-5 slices, diced (see pic below)
{buy the ham and use the meat during the week in eggs, soup, or just fry it up for tasty dinner}
3 cups of baby spinach
1 shallot, minced
3 small sweet peppers (1 red, 1 yellow, 1 orange), minced
sea salt and pepper to taste
1/4 tsp Crazy salt

Substitutions: if you don't have the meat listed here, try something else. It's very versatile.  Bacon is a nice sub too.

Directions:
In a large skillet heat 2 tablespoon olive oil over medium-high heat. Once heated, add diced sweet potatoes and apples. Add a pinch of sea salt and cinnamon to the pan.  Cook for 3 minutes, then add peppers. Cook sweet potatoes, apples and peppers until softened and edges are starting to brown.

While the sweet potatoes are cooking, heat a medium skillet with 1 tablespoon oil over medium heat. Add to skillet the chicken sausage, ham and shallot.  Wait until you see the meat gets a nice browning look on edges and is cooked through.  Add to sweet potato mix, turn down pan to medium.  Add spinach and keep moving food around pan so it doesn't stick.  If you see any burning areas, add a few drops of oil.  Add crazy salt and pepper.  Cook until spinach is wilted and sweet potatoes are soft all the way through.
