Turkey Picadillo
I sampled this on a hot buffet for lunch and had to recreate it. I found a recipe online and with some modifications, got what I was looking for. It got a serious thumbs up from the hubby so I know it's a keeper. Or as we like to say "You can make THAT again!" We have plans to have seconds over spaghetti squash. Can't wait!
Turkey Picadillo
Ingredients:
1/8 cup olive oil
1 lb. ground turkey (use natural, antibiotic free)
1 medium onion, chopped
1 medium green pepper, seeded and chopped
1 medium red pepper, seeded and chopped
2 stalks celery, chopped
2 tablespoons dried oregano
1/2 teaspoon cumin
1/8 tsp ground cayenne red pepper
1 1/2 teaspoon Hungarian sweet paprika
3 garlic cloves, minced (use fresh, not jarred)
4 tablespoons tomato paste
1 (14.5oz) can of diced tomato with juice
1/8 cup cooking white wine
1/2 cup water
1/3 cup cider vinegar
1/2 teaspoon
1/2 cup manzanilla olives, sliced
1/4 cup raisins
1/4 cup capers, drained
Directions:
Heat olive oil over medium heat in large pan until oil shimmers. Add ground turkey, cook all the way through, chopping into pieces. Once turkey is cooked, add the remaining ingredients. Simmer for 20 minutes and serve!
